Butter Cookies Recipe
Butter cookies, lovely with some tea or just as a snack. This recipe is easy and will lend itself to a nice activity together with children. It is a basic recipe and lovely on itself but you can also add some dried fruit like raisins or cranberries, nuts like hazelnuts or macadamia nuts or, for the real sweet tooth among us, some chocolate chips!
Supplies
- Kitchen scale
- Stand mixer (optional)
- Rolling pin
- Cookie cutters
- Baking tray with baking paper
- Oven (175 °C/347 °F)
Ingredients
- 200 gram flour (I used spelt flour)
- 75 gram sugar
- 1 egg yoke
- 8 gram vanilla sugar
- 125 gram butter
How to bake
- Add the vanilla sugar, sugar and flour in a bowl (or your stand mixer) and mix.
- Cut the butter in cubicles and add them together with the egg yoke to the sugar/flour mixture.
- Mix until you have a crumbly dough and transfer it to your working bench.
- Make a firm ball of dough with your hands and wrap the dough in plastic wrap.
- Put the dough in the fridge for about half an hour.
- Pre-heat your oven to 175 °C/347 °F.
- Put some flour on your working bench and after half an hour take the dough out of the fridge and plastic wrap.
- Take your rolling pin and roll out the dough until you have a sheet of dough of about half a cm thick.
- Cut the cookies with the cookie cutter and put them on the baking tray.
- Bake the cookies in the oven for about 15 minutes.
- Enjoy!
Notes
- If the dough is to dry add a little bit of water, if the dough is to wet add a little bit of flour.
- Make sure the dough is properly cooled, this will make the cookies extra crisp and easy to handle when cutting them.
- Keep the cookies in a closed cookie jar.
