Soft butter buns
Soft butter buns are tasty at breakfast, lunch, dinner or as a snack. You can serve it with some garlic butter at a barbecue, with some soup or take some with you when you go on a hike. Long story short, you can eat a soft butter bun at every occasion (did I already tell you I love bread? No really I do!).
This recipe yields about 15 small soft butter buns (depending on how big you make your dough balls) in about 2 hours time. I usually make one or two batches and freeze them in some freezer bags so we have buns for the whole week. Because of the high amount of butter it doesn’t take long to defrost the buns. When you take them out in the morning you will have a defrosted bun for lunch.
Supplies
- Kitchen scale
- Stand mixer (optional)
- Mixing bowl
- Tea towel or plastic wrap
- Baking tray with baking paper
- Oven (220 °C/428 °F)
Ingredients
- 500 gram flour (spelt, whole weat, einkorn etc.)
- 25 grams of sugar
- 8 grams of salt
- 60 grams of butter
- 1 egg
- 9 grams of dried yeast
- 250 ml lukewarm milk
How to bake
- Mix the yeast, sugar and the lukewarm milk and set aside for a few minutes until it starts to foam.
- Add the flour and salt in a bowl and mix.
- Add the lukewarm milk, sugar and yeast mixture and half of the egg to the big bowl with flour and salt.
- Knead shortly until you have a dough.
- Add the butter and knead the dough on your countertop until you have a nice smooth dough.
- Put the dough in the bowl and cover with some plastic wrap or a damp tea towel.
- Set aside for about 20 minutes.
- Divide the dough in 15 equal pieces, make a little ball of every piece of dough.
- Put the buns on a baking tray with baking paper.
- Add a table spoon of water and a pinch of salt to the other half of the egg.
- Brush the buns with the egg mixture and set aside for about 40 minutes (depending on the ambient temperature).
- Pre-heat your oven to 220 °C/428 °F.
- Bake the buns for about 10 minutes until they are fully cooked and nicely browned.
