Fermented overnight oats with milk kefir

Oatmeal for breakfast, my family loves it! We often start our day with a nice warm bowl of oats. Recently, we started getting our milk directly from the tap of the farmer in our village. We always cook our oatmeal porridge, which results in the loss of vitamins and bacteria that are good for your health. Since fresh milk is said to have various health benefits, I am looking for ways to consume the milk raw. So, we have started making milk kefir with raw milk.

What is milk kefir?

Milk kefir is a drink made by fermenting milk with kefir grains. These kefir grains consist of various bacteria and yeasts that convert the milk and produce a range of vitamins and enzymes, which, along with the bacteria and yeasts, are said to have a beneficial effect on the intestines. It has a probiotic effect and ensures your gut flora is balanced.

Milk kefir tastes slightly sour, less sour than yogurt or buttermilk, and has a slight fizziness due to the CO2 produced during the fermentation process. You can drink milk kefir pure or process it into smoothies, salad dressings, porridge, or make it into quark. The options are almost endless, and there is something for everyone!

Fermented overnight oats with milk kefir

I found the recipe for this fermented oatmeal in Christian Weij’s book. This recipe includes a generous amount of honey and a pinch of salt. The sweet, salty, and sour were not to my liking, so I adapted the recipe to my taste. I recommend that everyone adjust a recipe to their liking!

In this recipe, I used raw (fresh) milk, raw honey, and oatmeal. I halved the amount of honey from the original recipe and omitted the salt. For the topping, I used roasted oatmeal and nigella seeds.

  • 50 g oatmeal
  • 200 ml milk kefir
  • Optional: 20 g honey
  • Optional: topping of your choice
    • Roasted oatmeal
    • Fresh fruit
    • Chocolate sprinkles

Instructions

Weigh the oats in the jar, and add the milk kefir and honey. Close the jar and leave it overnight on the kitchen counter at room temperature. Take the jar the next morning, and add your favorite topping. Enjoy your oatmeal!

Ingredients

  • 50 g oats
  • 200 ml milk kefir
  • Optional: 20 g honey
  • Optional: Topping of your choice (roasted oats, fresh fruit, chocolate sprinkles, etc.)

Instructions

    1. Weigh 50 g of oatmeal in the preserving jar.
    2. Add 200 ml of milk kefir and 20 g of honey.
    3. Leave the oatmeal overnight at room temperature.
    4. Open the jar the next day and add your favorite topping.
    5. Enjoy your meal!

Notes

  • Topping suggestions: Fresh fruits, chocolate sprinkles, roasted oats, a pinch of salt.
