With this crumble topping, you can quickly prepare a delicious piece of pastry to go with your coffee or a tasty dessert.

Last Christmas, I made stewed pears. Of course, I made far too many pears. I froze the leftover stewed pears, and Tom and I used a portion of these frozen pears to make a delicious crumble.

What is a crumble topping?

A crumble is a pastry/dessert made by crumbling butter, sugar, and flour. These crumbs are then placed over a filling (e.g., fruit) and baked in the oven. Very easy to make “from scratch.”

There are all kinds of pastries made with a crumble topping. Grab some fruit, add some herbs or spices to taste, layer this delicious crumble pastry on top, and bake it in the oven. Serve with a scoop of ice cream, dollop of whipped cream, or simply enjoy as is.

Ingredients

  • 50 g cold butter
  • 40 g sugar
  • 100 g flour
  • 3 g salt

How to bake

Take a mixing bowl, weigh the butter, and cut it into small cubes or grate it with a coarse grater. Making the butter small will make it much easier to form crumbs.

Weigh the sugar and flour and add them to the mixing bowl with the butter. Mix the butter, flour, and sugar with your hands. Rub your hands together so that the sugar and flour clump together with the butter.

I have made some small crumbles, the longer you rub the flour, sugar, and butter the bigger your crumbs will be.

Once the crumbs are large enough, the shortcrust pastry is ready. The longer you rub, the larger the crumbs will become. The butter will gradually absorb the flour better.

Spread the shortcrust pastry over your filling and bake it in a preheated oven at 180°C for 25 minutes.

Tips

  • The longer you work the dough with your hands, the more flour will be absorbed by the butter. This will make the crumbs larger and larger.
  • Adjust the amount of sugar according to your filling. If you have a sweet filling, it may be better to add a little less sugar and vice versa. This way, you can avoid making the pastry too sweet.
  • Replace (a part of) the flour with, for example, oatmeal or almond flour for a different taste.

  4. The crumble topping pastry is ready once the crumbs are large enough. The longer you rub your hands, the bigger the crumbs will become. The butter will absorb the flour better.
  5. Spread the crumble pastry over your filling and bake in a preheated oven at 170 °C for 25 minutes.
  6. Enjoy!
