Last week, I shared a recipe for stewed pears and a recipe for a crumble pastry. It’s only natural to combine these recipes and share a stewed pear crumble recipe this week.

With this recipe, you can easily whip up a delicious treat that goes well with coffee, hot cocoa, or as a dessert. Stewed pears are full of fall flavors like cinnamon, and star anise so this recipe is perfect for rainy cold days. Be sure to prepare the stewed pears beforehand, so you can make this stewed pear crumble in just 30 minutes!

What are the Best Pears for Stewing?

This depends on where you live. Here in the Netherlands, everyone uses Gieser Wildeman pears. These pears are bred for stewing, very sweet, and can’t be eaten raw.

In the US, the variety of Williams or Bartlett pears is popular for stewing. These pears can be eaten raw but are often used for canning or stewing. The pears hold their shape well after processing, have a sweet flavor, and therefore are perfect for a dish like this easy stewed pear crumble recipe.

A Delicious Treat, Deluxe Dessert, or Sweet Snack

This stewed pear crumble is perfect as a dessert with a scoop of ice cream. With a cup of tea in the afternoon, or comforting in the evening after a long day of work.

​When keeping the stewed pears and crumble pastry at hand in your freezer you will be able to make this pastry in 30 minutes! You only need to fill an oven dish, pie dish, cast iron skillet, or some individual ramekins with the stewed pears. Top the pear filling off with the crumble mixture and put them for 25-30 minutes in the oven.

A Variety of Fruit Crumbles

The crumble pastry can be used for a wide variety of ‘fruit crumbles’. One of the most common ones is the apple crumble, but you can also try a cherry crumble, rhubarb crumble, or berry crumble. The possibilities are almost endless, take some seasonal, frozen, or stewed fruit and use it as a base for this delicious recipe.

Which Sugar or Sweetener Can You Use?

I use brown sugar in this recipe, but any sugar should be fine! If you want to use regular white sugar, coconut sugar, or even maple syrup, or less sugar this should be fine! Just taste your dish regularly and act if you think you should add a bit more or less sweetener. 

Changing the Flour

If you want a deeper flavor or just change things up a bit add some rolled oats, quick oats, or oat flour. I love oats, we eat porridge every day, so I must include this ‘oat crumble’ in this blog post. Often the most simple ingredients make an easy recipe like this super delicious!

Next to the difference in taste, incorporating oats instead of regular all-purpose flour is also higher in protein, higher in fibers, and, if you don’t want to eat gluten, gluten-free. A great way thus to change the recipe in all sorts of ways!

Ingredients

Stewed Pears

  • 3 kg pears (see above for some varieties perfect for stewing)
  • 60 g brown sugar
  • 3 star anise
  • 3 cinnamon sticks
  • 2-2.5 liters of red wine/grape juice/port/glühwein

Crumble Pastry

  • 50 g cold butter
  • 40 g sugar
  • 100 g all-purpose flour
  • 3 g salt

How to bake

Stewed Pears

Peel 3 kg of pears, leaving the stems intact. Place the pears in a large pan and pour in enough red wine/grape juice/port/glühwein to submerge all the pears. Add 3 cinnamon sticks, 3 star anise, and 60 g of brown sugar. Bring the pears to a boil and let them simmer for 3 hours.

Crumble Pastry

Measure out the butter and cut it into small cubes or grate it with a coarse grater. Add the sugar, salt, and flour, and mix with the butter. Form the pastry into crumbs by rubbing your hands together. The longer you rub, the coarser the crumbling pastry will be.

Stewed Pear Crumble

Grease a baking dish with butter. Cut the stewed pears into small cubes, strips, or slice pears and place them in the baking dish. Sprinkle the crumbled pastry over the stewed pears and put the baking dish in the preheated oven.

Bake the stewed pear crumble for 20-25 minutes at 180 °C/356 °F until golden brown. Enjoy!

Tips

  • Try using a different fruit, such as apples or mango.
  • Use custard over the fruit or instead of the fruit to make crumble pudding.
  • Make multiple small stewed pear crumbles by using small baking dishes instead of one large dish.
  • Add a scoop of vanilla ice cream to elevate your pastry to a deluxe, comforting dessert!
  • Add a teaspoon of vanilla extract, or lemon juice for a slightly different taste.

  • 50 g cold butter
  • 40 g sugar
  • 100 g flour
  • 3 g salt

  • 200 g crumble topping
  • 20 stewed pears
  • Butter

Instructions

Stewed pears

  1. Peel 3 kg of pears, leaving the stems intact.
  2. Place the pears in a large pot.
  3. Fill the pot with wine/grape juice/port/glühwein until all the pears are covered in liquid.
  4. Add 3 cinnamon sticks, 3 star anise, and 60 g of brown sugar.
  5. Bring the pears to a boil and let them simmer for 3 hours.

Crumble topping

  1. Weigh 50 g of butter and cut it into small cubes or grate it with a coarse grater.
  2. Add 40 g of sugar, 3 g of salt, and 100 g of flour to the butter and mix well.
  3. Form crumbs by rubbing your hands together. The longer you rub, the coarser the crumble will be.

Stewed pear crumble

  1. Preheat the oven to 180°C.
  2. Grease the baking dish with butter.
  3. Cut 20 stewed pears into small cubes or strips and place them in the baking dish.
  4. Spread 200 g of crumble dough over the stewed pears and place the baking dish in the preheated oven.
  5. Bake the stewed pear crumble until golden brown in 20 - 25 minutes.
  6. Enjoy your stewed pear crumble!

  1. It contains anise I would probably love it! I am a huge fan of the “black licorice” taste and I think pears are underutilized fruit because they’re so delicious.
