Vanilla extract
Vanilla extract is delicious in all kinds of baking. You can buy this extract in the store, but did you know that this is also very easy to make yourself?
All you need are quite a few vanilla pods, preferably of good quality, alcohol such as vodka, bourbon or rum and a bottle to keep it in.
I used 15 vanilla pods, 1 liter of vodka and a glass bottle.
Why make vanilla extract yourself?
Vanilla sugar is an easy go to for all your baking recipes. But did you know the vanilla sugar you buy in the supermarket is mostly vanillin sugar?
What is vanillin sugar? Vanillin is a by-product of the papermaking industry. It is a synthetic substance which smells and tastes just like vanilla (but not quite yet).
I like to use original and organic ingredients as much as possible, a synthetic flavour like vanillin does not fit into that category.
You can also make your own vanilla sugar by adding a few vanilla pods to a jar full of sugar.
Using vanilla extract in recipes
Recipes don’t always use extract. Often vanilla sugar or marrow from a vanilla pod is indicated. One teaspoon of extract equals:
- 2-3 teaspoons vanilla sugar
- 1/3 marrow from a vanilla pod

- Knife

Ingredients
- 15 vanilla pods
- 1 liter vodka, bourbon or rum
How to make
- Cut open the vanilla pods and add them to the empty bottle.
- Top up the bottle with the alcohol and seal.
- Shake the bottle every day or every other day.
- After a month you can start using the extract in your baked goods.
Tips
- For every 200 ml of alcohol, use 3 vanilla pods.
- You can also use the bottle of the alcohol, but be careful. Before you add the vanilla pods to the bottle, make sure you remove some alcohol from the bottle first.
