Super simple cupcake recipe

Yesterday evening Tom was craving some sweets (of course precisely after all the stores were closed) and unfortunately we didn’t have any at home. Luckily he has a great wife (ahem) who knows how to make some easy homemade cupcakes in under 30 minutes!
Back in the day when I was in high school, I learned this recipe. It’s a foolproof recipe and has never let me down. The recipe is also really easy to memorize, you only have to make it once, and you’ll never forget it. For every egg, you need 50 grams of flour, sugar, and butter. And that’s all!
Of course, you could make some luxury cupcakes with some fresh fruits, chocolate, vanilla extract, or who knows what. But that isn’t going to work under 30 minutes. And when you have a whole day of work behind you, you just want some easy cupcakes.
How long does it take to bake cupcakes?
There are several different kinds of recipes to bake cupcakes. With this recipe you can bake the cupcakes within 30 minutes. The preparation takes about 10 minutes and the bake time takes 20 minutes.
How do you know if the cupcakes are cooked?
By the end of the baking time you can check if the cupcakes are fully cooked by pinching it with a knitting pin or knife. If the knife or pin has any uncooked batter on it the cupcakes are not done yet.
Another way to check if your cupcakes are cooked is by measuring the internal temperature. The cupcakes should be around 205 °F (96 °C).
Don’t have a knife, knitting pin, or thermometer by hand? You can also check the cupcakes by pressing it down with your finger. Does the cupcake have a dent? Put it back in the oven for a few minutes. Does the cake spring back without leaving a dent? It is ready to eat!
What if you forgot to take the butter out of the fridge?
No worries, it happens to me all the time. I’m quite a chaotic mind and usually decide to bake something right on the spot. That means the butter is more often cold than at room temperature.
A quick fix I use if it happens again: take a (cheese) grater and grate the butter. This way you get narrow strands of butter that heat up very quickly to room temperature and become soft in no time.
What to do if you don’t have any cupcake molds laying around?
Back in the day when cupcakes were just invented in the USA, this cake was baked in teacups. So if you don’t have any cupcake molds in your pantry you could just use a bunch of teacups.
The beauty of baking with teacups is that you also don’t have to use any silicone, paper, or whatnot cupcake mold. Better for you and better for your environment and I think that just makes this cupcake recipe even more from scratch!
Baking supplies
- Oven (baking temperature around 356 °F)
- Bowl
- Kitchenscale
- Spoon
- Whisk or handmixer
- Cupcake molds
Ingredients
- 3 eggs
- 150 grams of sugar
- 150 grams of flour
- 150 grams of butter (at room temperature)
How to make cupcakes
First of all, preheat your oven to 356 °F. Take a mixing bowl and mix 150 grams of sugar and 150 grams of butter until you have a smooth paste.
Add 3 eggs one by one, mixing the batter until the whole egg is taken up by it before you add the other ones.
When all the eggs are added and mixed in the batter, add 75 grams of flour. Make sure to sift the flour as you add it to the mixing bowl.
Mix well. When all the flour is incorporated in the batter you can add the other 75 grams of flour.
If all the ingredients are added and mixed, put the batter in the cupcake molds and put them in your pre-heated oven.
Bake for 20 minutes until the cupcakes are fully cooked.

Tips
- Add 30 grams of cacao powder to make easy chocolate cupcakes.
- Constitute 10 grams of sugar with vanilla sugar or add 1 teaspoon of vanilla extract to get that lovely vanilla taste.
- If you want to add any toppings you should wait until the cupcakes are cooled to room temperature.
