Savoiardi is also known as ladyfingers, sponge fingers, or boudoir biscuits. Essentially, all these simple, delicious cookies are the same. Beat egg whites with sugar, stir in the yolks, and then add some flour. The result is a deliciously light and sweet cookie that is perfect for use in desserts such as tiramisu.
Ingredients
- 4 eggs
- 1/4 tsp salt
- 120 g sugar
- 10 g vanilla sugar
- 100 g flour
- Extra sugar to taste

- Piping bag with round tip or plastic bag

How to bake
Preheat the oven to 180 °C. Start by separating the eggs, and adding the egg whites to a large mixing bowl or the bowl of a stand mixer. Add the salt and beat the egg whites until stiff. Gradually add the sugar and vanilla sugar while continuing to beat the egg whites.
Stir the egg yolks briefly with a fork or spoon, then add them to the egg whites. Gently fold the yolks into the egg whites using a spatula.
Use a sieve to sift the flour before folding it into the egg mixture.
Once all the ingredients are well mixed, transfer the mixture to a piping bag or plastic bag. Pipe the mixture into long, thin strips about 10 cm long and 1-2 cm wide. Sprinkle extra sugar over the cookies to taste, then bake for 10-15 minutes in the oven.
After baking, transfer the Savoiardi, or ladyfingers, to a wire rack to cool. Enjoy!
