Healthy Quiche

Healthy Quiche, it’s a really simple meal to prepare and you can eat it at lunch, dinner or as a snack. Besides being a simple dish its also a good way to integrate any leftovers. Another bonus, you will have it on your table, ready to serve in under an hour.

This time I did not make my own puff pastry so that is a little bit of a shortcut. Someday I will bake a quiche completely from scratch with my homemade puff pastry, I promise!

Cooking supplies

  • Oven
  • Skillet
  • Cutting board and knife
  • Whisk
  • Mixing bowl
  • Oven dish

Ingredients

  • 1 broccoli
  • 1 red onion
  • 2 or 3 cloves of garlic
  • 1 red chili pepper
  • 1 red bell pepper
  • 4 eggs
  • 150 ml heavy cream
  • 100 g freshly grained cheese
  • 10 cherry tomatoes
  • Nutmeg, oregano, black pepper and salt to taste
  • 1 roll of puff pastry
  • Oil (i.e. olive or coconut)

How to cook

  • Pre heat your oven to 210 °C and set a pan with water on high heat to a boil.
  • Cut the onion, broccoli, garlic, bell pepper and red chili pepper.

  • When the water is boiling, add the broccoli. Boil for 3 minutes, drain and set aside.
  • Take your skillet, put it on medium heat and add some oil.
  • Bake the onion and red chili pepper for a minute.
  • After a minute add the garlic and bake for a few minutes.
  • Add some salt and black pepper to taste.
  • Add the broccoli and dried oregano to the skillet and bake for a minute on high heat.
  • Take the vegetables out of the skillet and set aside to cool.
  • Take a bowl and mix the eggs and heavy cream together.
  • Add half of the cheese, pepper, salt and nutmeg to taste.
  • Cut the cherry tomatoes in half and add to the egg/cream mixture together with the baked vegetables.

  • Take some butter and grease your oven dish.
  • Roll out your puff pastry and add to the greased oven dish. Pinch some holes in the pastry with a fork or a sharp knife.
  • Add the egg/cream/baked vegetable mixture to the oven dish and cover with the cheese.
  • Bake the quiche until it is completely solid, this will take some 30 – 35 minutes.
  • Enjoy your homemade healthy quiche!
