Mexican Wraps
Mexican Wraps who doesn’t like them! Last week I posted a Tortilla Wraps recipe. When I was doing my groceries a few days ago I saw a vegetable mix for making guacamole. It consisted out avocados, a tomato, a shallot, a red chili pepper, a few cloves of garlic and one lime. This gave me the idea to make some homemade Mexican wraps. It is my own recipe and not really that exciting, but Tom liked it and it is great for when you have some leftovers.

You can make these as healthy as you want, add vegetables, switch the ground beef for chicken or even skip the meat at all. At least you know that within 30 minutes you’ll have a decent and healthy meal for your family.
This time I baked some corn on the cob with butter, salt and pepper in the oven and added some crème fraîche.
Ingredients
- 250 grams of ground beef
- 1 or 2 bell peppers
- 1 onion
- 1 red chili pepper
- 250 grams of black beans (I used canned beans so if you use dry beans you should adjust the weight)
- Mexican herb mix (with for instance: garlic powder, smoked paprika powder, chili powder (or flakes), turmeric, cumin, dried oregano or dried cilantro)
- Salt and pepper to taste
For the Guacamole
- 2 avocados
- 1 tomato
- 1 shallot
- 1 red chili pepper
- The juice of 1 lime
- 2 or 3 cloves of garlic
How to Cook
- Make enough Tortilla Wraps.
- Wash and cut the bell peppers and red chili pepper.
- Cut the onion and garlic. Strain the black beans (I always wash them thoroughly with water so the conservation additives don’t end up in my dinner).
- Put a skillet on medium heat and add the ground beef, garlic and onions.
- After 5 minutes add the herbs, bell pepper and red chili pepper.
- Wash the tomato and red chili pepper and add these to a food processor together with the garlic, onions and lime juice.
- Peal the avocados and mush them with a fork until you have a smooth avocado paste and mix this with the processed tomato, garlic, onion and red chili pepper mixture.
- Add the (strained) black beans 5 minutes before serving.
- Make sure you have reheated your Homemade Tortilla Wraps if necessarily.
- Add some guacamole and the Mexican spiced beef mixture and make a burrito of your tortilla wrap.
- Finish your wrap with some sour cream or crème fraîche and maybe a corn on the cob.
- Enjoy!
