Homemade Pizza
Today I wanted to order a pizza for dinner, but then I thought “hmm no, that is not really healthy cooking from scratch.” So I pulled myself together to bake some homemade pizza, I made some homemade tomato sauce earlier this week so this was a convenient coincidence. It was so easy and really delicious!
A perfect way to eat this week’s leftovers
I used some leftovers that we still had in the fridge. We had some bell peppers, jalapeños, onions, mushrooms, the homemade tomato sauce, mozzarella and farmhouse cheese. For the pizza dough I used some dried yeast, in the near future I think I’m going to try and make some pizza dough with my sourdough starter, I think this will really make delicious pizza dough! Which flour should you use?
Some recipes on the internet mentioned that the traditional flour used for pizza dough should be the Italian flour type ’00’. Unfortunately I didn’t have this type of flour so I used regular wheat flour. Maybe with this ’00’ flour the pizza’s will be even more delicious.
One word: Cheese!
Because I live in the Netherlands, I love cheese (how typical). On these pizzas I used grained farmhouse cheese, this is a Dutch specialty product that is made directly on the farm. The raw milk is processed into cheese within 24 hours after the cow has been milked. Because the milk in this cheese is coming from one farm it always has a unique taste. This unique taste depends on where the farm is located, at which grass type the cow eats and how long the cheese has matured. I especially love the more mature cheeses, these have a full and rich taste and really make a difference between your ordinary (supermarket) cheese.
Supplies
- Kitchen scale
- Mixing bowl
- Stand mixer (optional)
- Tea towel
- Rollingpin
- Cheese grater
- Bakingtray with parchment paper
- Oven (250 °C/482 °F)
Ingredients
For the dough
- 500 grams of whole wheat flour (or ’00’ when available)
- 300 ml (filtered) lukewarm water
- 10 grams of salt
- 7 grams of active dry yeast
- 2 table spoons of olive oil
For the pizza
- Homemade tomato sauce
- Mozzarella
- Farmhouse cheese
- Mushrooms
- Jalapeños
- Bell pepper
- Onion
How to cook
Pizza dough
- Mix the flour, salt and yeast together.
- Add the lukewarm water and olive oil and start mixing everything together with your hands.
- When the water and oil are completely integrated in the dough start kneading it.
- After kneading for 8 to 10 minutes the dough should feel more stretchy.
- Take a bowl and add some flour or grease it with some olive oil so the dough doesn’t stick to it. Let the dough rest, cover the bowl with a kitchen towel and put it away for 15 minutes at room temperature.
- After 15 minutes, take the dough and divide it into 4 parts. Let the dough parts rest for about an hour or until they are doubled in size under a kitchen towel at room temperature.
And finally the pizza!
- Sprinkle some flour on your working surface and press every dough ball flat with your hands (or use a rolling pin) until it is formed as a round pizza with a diameter of about 30 cm.
- Add some table spoons of your delicious homemade tomato sauce and spread it out on the pizza dough.
- Take some (freshly) grained cheese and add it together with the topping of your choice to the pizza.
- Bake the pizza’s at 250 °C (my oven only goes to 220 °C and that was fine too) for 10 to 15 minutes.
- Enjoy!
