Tomato Sauce

Every time when making spaghetti I use canned tomatoes. This should change. Homemade tomato sauce can’t be that difficult to make, I think.

Eventually I want to grow my own tomatoes in our garden but the winter is going strong here, and tomatoes need a lot of sun, so this should wait until summer time. Luckily the store has some varietys of tomatoes. I bought 1 kg of organic tomatoes and went cooking.

Ingredients

  • 1 kg tomatoes
  • 1 bell pepper
  • 1 red chilli pepper
  • 1 onion
  • 6 cloves of garlic
  • 2 carrots
  • Dried or fresh herbs to taste (basil, thyme, marjoram, rosemary, sage)

How to cook

  • Wash and slice the tomatoes, red chilli pepper and bell pepper and put them on a baking tray covered with baking paper.
  • Cut the onion and carrot and add these to the baking tray.
  • Drizzle some olive oil over the vegetables and sprinkle the dried herbs, salt and pepper to taste.
  • Put the vegetables in a pre-heated oven (180 °C) for about an hour.
  • When the vegetables are roasted for an hour, take them out of the oven and into a food processor. Make a smooth sauce and add some more herbs if necessary.
