Sauerkraut Casserole
Sauerkraut Casserole, a dish my grandmother used to make so this is a bit of a trip down memory lane (oh I’m getting old).
When my brother and I were younger we used to visit our grandparents every Friday. My mother and grandmother would go to the local market and supermarket to do the groceries for that week and my grandfather would pick my brother and me up from school. We would walk home with him (a half an hour walk or so) and then we would read the Donald Duck magazine, sometimes go to the market as well and play some games in the winter or play outside in the summer. When my dad was finished working he would come as well and after we ate together (and my mother played a sort of mandatory game of Scrabble with my grandmother) we went home with our parents or one of us would stay and sleepover. It was a nice way to start the weekend and end the school week.
One of the dishes my grandmother used to make on such a Friday was this casserole with sauerkraut. She used to add raisins, but I don’t like raisins so I did not add them in my casserole. I hope you enjoy this homemade sauerkraut casserole as much as I do!
Cooking supplies
- Oven (180 °C)
- Skillet
- Cooking pan
- Oven dish
- Masher or mixer
Ingredients
- 700 g potatoes
- 500 g sauerkraut
- 1 onion
- 2 cloves of garlic
- 50 ml milk or heavy cream
- 50 g butter
- 7 slices of pineapple
- 350 g ground beef
- Bread-crumbs
- 100 g freshly grated cheese
- Some water or apple juice
- Salt and nutmeg to taste
How to cook
- Peal the potatoes, put in a pan with water and set to boil on the stove on high heat. Boil for a minimum of 20 minutes or until the potatoes are soft.
- Pre-heat the oven to 180 °C.
- Slice the onion and garlic.
- Put your skillet on the stove on medium heat and melt some butter.
- Add the ground beef to the skillet.
- Bake for 5 minutes.
- Add the onion and bake for 5 more minutes.
- Put a pan with the sauerkraut on the stove on medium heat until it boils.
- Add some water or apple juice to the sauerkraut and et the sauerkraut boil for 5 minutes.
- Add the garlic and salt to taste to the ground beef with the onion and bake for another 3 minutes.
- Cut 4 pineapple slices into cubes and mix with the sauerkraut.
- When the potatoes are cooked, add the milk or heavy cream and the butter and mash it all together. Add some nutmeg and salt to taste.
- Take your oven dish and grease it with some butter.
- First add a layer of mashed potatoes (half of the mashed potatoes), then a layer of the ground beef, then a layer of the sauerkraut and pineapple and finish with another layer of mashed potatoes.
- Decorate the dish with the last slices of pineapple, add the bread-crumbs and cheese and put in the pre-heated oven for 20 minutes.
